Down another two pounds!

So I know I'm really late posting, but this past week I'm down another 2 lbs, making me 0.2 lbs away from the 150 lb mark. Now, since that Wednesday, the rest of my week has been a rollercoaster of good and bad food, so who knows how the scale will react next week.




 Turkey panini from La Villa, down the street. I only could eat half, so it was good to have for dinner later.

This place is my favorite!


Also, it is the dreaded Girl Scout Cookie time. ugh.
I love girl scout cookies, but the points...eek. I actually figured out how many Weight watchers points plus per cookie, and it is quite depressing. Check out this post I did a while back on the breakdown.

 Basically 1 points plus per thin mint. ugh

 My hubs made the BEST cupcakes ever- Moscato cupcakes with moscato cream cheese icing. So bad, yet so good. When he gets around to posting the recipe, I'll post it up too.

So the hubs and I went to Chili's after a long day of working on the house. I was pleasantly surprised to find that they now have a low-cal/healthy menu. They had skinny margaritas (below) and lots of other great choices for low calories (and low points!). I was sooooo happy!

 To be honest, this skinny margarita was one of the best margarita's I've had in a long time

 Margarita chicken with rice and beans. So good and filling, and not that bad point wise!

My hubs saw a ham and egg breakfast "muffin" so he thought he'd give it a shot for the first breakfast we had in our new breakfast nook (see my madcapfrenzy blog post on how that turned out). It was tasty, but we realized probably 2 slices of ham per "muffin" would hold together better.

Anyways, we showed off a new breakfast nook and dining room/bar with friends coming over, so my meals and eatting habits were terrible this weekend. Today wasn't very good either, as I just down right was hungry and felt icky...sadly after eatting more than I should, I feel even worse. blah.
I need to get back to exercising to make up.

I made dinner for once! Super simple cheesy beef enchiladas

Ok, I'm gonna start this post off with what I did yesterday- I made dinner for once. See, my hubs is the cook in our house, but he has been super sick all week- has a very bad case of Brochitis, so he begged me to either pick something up or make dinner. I was feeling ambicious after working a mid-day shift instead of a night shift, so I decided to make beef enchiladas. These were super easy to make!



Super Simple Cheesy Beef Enchiladas

What you need:
  • 2 cans enchilada sauce (calls for 2, but I only used one, since that is all I had)
  • 1 lb ground beef
  • shredded mexican blend cheese
  • tortilla shells
Directions:
Preheat the oven to 375 degrees. Brown the ground beef in a skillet or electric fry pan. Drain the grease and the pour in about 3/4 or 1/2 (depending on what you like) of the enchilada sauce in with the beef and some shredded cheese (about a cup or so). Mix it together. Spray cooking spray (PAM) on inside of casserole dish. Scoop the enchilada insides into the tortilla shells and put the seam side down in the dish. Once you have all your enchiladas in the dish, pour the remaining enchilada sauce overtop and sprinkle some more cheese. Bake in the oven for 15-20 minutes.


I served it will refried beans, spanish rice and corn. I am going to admit right now, I DID NOT look at the weight watchers points plus at all for this entire meal, as my hubs was so sick and I felt I'd be nice and not force him to eat a weight watchers meal. So forgive me healthy peeps, as this probably wasn't the best health-wise meal. If you use chicken or turkey meat and low-fat or skim milk cheese, would probably make the enchiladas healthier and different sides (more vegs).

Anyways, on to the rest of the week in food.

 Actually had a Starbucks Frappicino last Saturday- but healthier- got a Low-fat caramel tall frapp. with no whip and low-fat milk. Only 3 weight watchers points plus supposably! Had a side of fruit and I was super good that morning!

 Gave Special K's cracker chips a second chance, and boy am I glad I did. I personally don't like the sea salt chips, but these Sour Cream & Onion ones are awesome! I went back and bought the Southwestern Ranch and Chedder ones the next day, and those are great too!

 A simple lunch- Sp. K chips, banana, cheese stick, and turkey sandwich.

 Super happy that I can pull off skinny jeans for once. I never could do that when I was heavier, and now they are my favorite to wear with flats!

Happy to find Angry Orchard hard cider at our local beer distributor. According to my calculations, supposably it is only 3 weight watchers points plus! Woo!


So when I weighed in this morning I was +0.6 lbs, however that might be totally different tomorrow morning, since the enchiladas we had last night, and you know how mexican food makes people bloated (not to sound gross or anything).

Back on the saddle and losing the pounds

yay! I'm down another 3.2 lbs this week, after restarting my weight loss program. I'm basically taking everything I've learned from Weight Watchers: track my points, count my points, exercise, etc. and tada! Weight loss. (I even had some leftover holiday cookies!)



 (No more cookies left in the house- thank heavens!)

I stuck to my 26 points plus (which is what roughly I should be at- I did 27 on some days, since I'm at the point that is between those two numbers) all but one day. Saturday- my day of doom. I would of been perfect if I didn't have buffalo chicken strips and Woodchuck cider, but alas, I was good the rest of the week and it paid off in the end. Best to have your bad day in the middle of the week, so you can work it off later in the week. haha

 (I know- bad bad...however I only ate a small portion of the fries and had my husband's carrots too!)

I only got a little bit of exercise, and it was today (walking with co-workers), so it technically didn't count to my weight in this morning, but I'm hoping I can get a little bit more of the walking exercise in this week. We'll see if the weather permits.

I happily had me some Tuna Rolls from Concerto Fusion (down the road from us). Super low points meal!



I enjoyed Indian Food from Indian Garden in Yardley, Pa. on Monday, and luckily ate well the rest of the day so I could enjoy Chicken Makhani. After having the Lean Cuisine version a few weeks ago, I've been craving Indian food ever since.

I've also found that frozen pineapple is a great zero point snack that has kept me saine in my weight loss reboot. I used to eat frozen mangoes like ice cream, so its nice to try another frozen fruit.



Other than that, been sticking to my variety of lean Cuisines, Smart Ones and Healthy Choice meals while at work. The pesto pasta from healthy Choice I tried this week- it was AMAZING! Delicious!


Lastly, my hubs and I have been in LOVE with our new SodaStream. They have a diet energy drink (tastes EXACTLY like Red Bull) and I love their diet Grapefruit (below). The diet soda is good too, sadly the Diet Dr. Pepper-type doesn't taste the best, but one out of all not good, is great for me.

A New Year to start again

So, between October to December, I kind of took a break from Weight Watchers. I lost 65 lbs in a year, and I thought- with moving/buying our first house and the holidays, it was going to be too tough to keep up with. I gained some of the weight back (since I didn't eat well at all), so being the 2nd of January 2013, it is now my official restart day. I did get to wear some adorable clothes being less this season, even if I did gain some back.







Back to the Weight Watchers plan I go. Less to lose this time around.

New starting weight: 155.6 lbs

Goal weight: 140 lbs (maybe as low as 135, but if not, it's no biggie)

(Reminder to self- gotta update my tracker on the left side with the revised digits).

So here we go!

I gotta lay off this stuff or eat smaller portions of some of the food I had this season. Here is a quick showcase of the past 3 months in food- bad for you food mostly,but a few goodies, lol:
